The goal of this research project was to evaluate the effectiveness of goal oriented activities in a nutrition class in promoting healthy lifestyles of college students. In addition to the traditional approach of lectures, educational materials and activities which are goal oriented were added to the class. The students were asked to participate in food challenges to help translate nutrition knowledge into behavior change. Typical food challenges included: eat when hungry, eat more fruits and vegetables, decrease added sugar, choose healthy fats, shake the salt habit, increase your calcium intake, control portion size, choose healthy snacks and cook using herbs and spices. Each challenge was accompanied by tips to meet the challenge and several cooking videos. Data collection included beginning/end of course surveys, written reflections, and diet analysis.
